Chicken souvlaki
3 chicken breasts cut into kabab-size piece
2 tablespoons olive oil
3 cloves garlic minced
1 heaped tablespoon dried oregano
½ teaspoon paprika flakes
¼ cup freshly squeezed lemon juice
½ teaspoon freshly ground black pepper
1 teaspoon salt
Bowl (quantities are a guide only)
2 cups cooked brown or white rice or quinoa
2 cups halved cherry tomatoes
2 cups chopped cucumber
3-4 cups shredded iceberg lettuce
½cup sliced red onion
Homemade Tzatziki
Feta crumbled (optional)
Kalamata olives, pitted (optional)
Ladolemono Dressing
2 tablespoons fresh lemon juice
6 tablespoons extra virgin olive oil
Salt and pepper
1. Marinate Chicken
In a large bowl, combine the chopped chicken breast with all the marinade ingredients. Ensure the chicken is well coated - seal and refrigerate for at least 30 minutes, ideally letting it marinate for a few hours for enhanced flavour. (Pro Tip: To help the chicken absorb the marinade much quicker, marinate in a Luvele glass vacuum container and employ the hand pump to seal.)
Optional: Thread the marinated chicken onto skewers.

2. Grain
Cook your choice of grain according to packet instructions. Serve hot or leave to cool.

Lay the prepared salad ingredients on a platter or store in individual containers for easy assembly later.

Whisk the lemon and oil in a small dish. Add salt and pepper to taste.
