How to Make Tuna Salad Meal Prep

There’s really nothing to it - just mix everything together in a bowl until well combined. That’s it. Seriously. You can also adjust it to suit your preferences. Try yogurt in place of mayo or add extra crunch with cucumber or celery.

Tuna sandwiches

INGREDIENTS

2 x 185g cans of tuna (drained)
1 cup cherry tomatoes, halved or quartered depending on the size
4 large sweet and sour pickled cucumbers, (approx. ½ cup) finely chopped
2 tablespoons capers
½ cup mayonnaise or yogurt
1/3 cup red onion, finely chopped
2 teaspoons Dijon mustard
2 teaspoons hot sauce (we used sriracha sauce)
2 tablespoons of fresh dill or basil, finely chopped
¼ teaspoon salt

Optional extras for meal prepping:
Cheese – tasty, mozzarella, or parmesan
Spinach leaves or other greens
Cucumber or celery
Avocado
Cooked pasta
Crusty bread, pita pockets, or wraps

METHOD

1.   Scoop the drained tuna into a large bowl.
2.   Add the mayonnaise, mustard, hot sauce and salt. Mix thoroughly to combine.
3.   Add all the remaining ingredient and stir to combine.
4.   Pour the tuna mixture into a Fresh glass food container. Employ the hand pump for maximum freshness.
5.   Store in the fridge for 1 week.
